Is there a command for the HUD option in Game Settings -> Advanced -> HUD Options -> HUD Style -> Small, Medium, Large? I can't seem to find this on any QL command list sites, as well as in this guide.

Yes it's commands and variables that it uses, but it's not quite how you think.
Each option sets the following:
Normal: cg_hudFiles "ui/hud.txt"
Small: cg_hudFiles "ui/hud2.txt"
Large: cg_hudFiles "ui/hud3.txt"

After that, it executes the 'loadhud' command so that every time you change the option, it applies the HUD immediately.

I have no idea where you got the idea that r_displayRefresh and r_swapInterval is only useful with CRT monitors, I very much prefer 120Hz and v-sync off on my LCD.
